2018 Ferratus Tempranillo AO, Ribera Del Duero, Spain   

Ferratus is a red wine from D.O. Ribera del Duero produced by Bodegas Cuevas Jiménez. It is a single-variety of Tempranillo. The grapes come from vineyards cultivated in vase-shape, located in La Horra, Olmedillo, Quintana de Pidio and Sotillo de la Ribera. After the manual harvest and once they arrive at the winery, in 15-kg boxes, the grape berries are fermented in stainless steel deposits. However, the malolactic fermentation is carried out in oak barrels. Ferratus is aged for 14 months in new oak barrels, mainly made of French oak, using customised roastings. The wine is bottled without cold stabilisation.
