2022 Caelesta White Blend, Templeton Gap   

Our 2022 White is our first release with estate fruit. Since yields were extremely low, we couldn't fill the press enough with either the Chardonnay or Viognier fruit on their own. Our solution: press them together and create the first Chardonnay and Viognier co-ferment in the Paso area. The 2019 White was fermented in stainless steel for over two months on fine lees before being barreled down to one new barrel, one neutral barrel, and one stainless steel drum. 30% New Oak. Unfined. Partial Malo.
